- My most memorable food
experience
- This will have to be
when I was 14. I did work experience at the Novotel in Noumea. My first
task was to peel 50kgs of potatoes using a vegetable peeler. I spent most
of the afternoon doing so, with senior staff watching me, until a lady
said to me.. “Why aren’t you using the machine”. You think they could
have told me that 4 hours earlier!! I only had about 4 potatoes left to
peel. I used to get up very early around 2am every day, left home on my
bike to go and prepare breakfast for the hotel guests. I learnt how to
prepare the traditional Tahitian desert, made of tapioca flour, coconut
milk, and other sweets. It was tough at 14 to get up so early and bike to
work experience for ZERO money!! But when I look back, I still remember
that day!!

few years ago, interest rates were high I had bought my first apartment,
was short with cash, I had to leave the shopping at the supermarket. $7
was too expensive I lived over a few days without food until one of my
friends helped me.

education matters to you
- Helping others does not cost anything, it is important to lend a hand when you can. I have for many years helped cancer patients from New Caledonia. I used to take them on daytrips to make their life more peaceful whilst on treatment in Australia. Part of the daytrip was stopping for lunch somewhere or cooking together. I work from time to time with the New Caledonia government to assist their nationals in Australia.
