Aidan began his culinary career at L'Ecrivain in Dublin, a restaurant that held a Michelin star for over a decade — the foundation of a career built on precision, technique and an uncompromising standard for flavour.
From there he took his craft international, cooking at Gordon Ramsay's restaurant at The Ritz-Carlton, London before returning to Australia where he joined the kitchen at Guillaume at Bennelong at the Sydney Opera House.

His next chapter brought him to Merivale, where he rose to Junior Sous Chef and won the Young Chef of the Year Award. He was subsequently placed at the newly acquired Beresford Hotel to help elevate its food offering from the ground up. In September 2017 Aidan joined Cook & Waiter as Head Chef, delivering exceptional event catering across corporate, private and wedding clients and leading menu development across a busy events calendar. Today Aidan serves as Head of Culinary at Alder Road Group — the hospitality group behind Food Rascal, Cook & Waiter, Saltbox and Bakehouse Twenty. 

Through Food Rascal, he leads the culinary operation at Atlassian's Sydney headquarters, overseeing the daily food experience for one of Australia's most recognised technology companies.
