Jamie is a New-Zealand born, London-trained chef who has worked in Australia for 20 years at fine diners Rockpool, Pearl and est. as well as local favourites Rushcutters and Berta.
Jamie started his cooking journey in England, where he studied traditional French techniques which were applied in some of London’s best restaurants, including Chez Nico and the Café Royal. When adventure took him to Sydney, Jamie encountered the multicultural melting pot of Australian cooking, leading to an appreciation for Asian and Australian cuisines, which continue to influence his food philosophy to this day.
Jamie has always been inspired by the chefs he works alongside; the Peter Doyles and Kylie Kwongs of the industry, who respect and appreciate fine produce, fine techniques and who value fine chefs. Jamie is honoured to bring this experience, attitude and respect to the Oz Harvest CEO CookOff for the first time in 2018.
