Thi fell in to a career in cooking accidentally - when a chance meeting while travelling half-way across the world resulted in her working in a small commercial kitchen in regional NSW. That experience nudged Thi towards an apprenticeship that later saw her work in kitchens, and for chefs, that appreciated the simplicity of produce. Whilst Vietnamese by heritage, Thi’s style of food is framed by her childhood where she grew up in Sydney’s Western suburbs amongst food-loving cultures (Vietnamese, Filipino, Lebanese and Turkish, to name a few). Today, Thi is the chef-owner at Anchovy, a restaurant on Bridge Road in Richmond, serving food that reflects her influences as an Asian-Australian.
