Daniela Maiorano is a fourth-generation chef, born and raised in Sulmona, in Italy's Abruzzo region, now based in Byron Bay. Her family has run Ristorante Clemente since it opened after WWII — first as a cantina, then as a trattoria under her grandmother, a home cook who took over the kitchen when women, not men, ran the show in Italian kitchens of that era.

Daniela grew up surrounded by seasonal produce, working farmers, and shepherds in the mountains around her hometown — all of which shaped her instinct for simple, ingredient-led cooking. Her food philosophy is straightforward: source well, respect the season, and use minimal intervention so good produce can speak for itself. Over the past 20 years, extensive travel has added new techniques and influences to that foundation, without changing the core approach.

Growing up in a family restaurant meant growing up around people — regulars, artists, teachers, and those without family of their own, many of whom the restaurant fed for free. That ethos of feeding people, regardless of their ability to pay, is something Daniela has carried into her own approach to hospitality.

Ristorante Clemente is still running today, now led by her father and step-mother, and this year received recognition from Italy's Slow Food movement — a mark of the family's decades-long commitment to quality and community.
