Sarah Baldwin got her start in hospitality as a high school dishwasher at a local Chinese restaurant, moving into front of-house and barista work before a friend led her to an apprenticeship at 20. In 2019, alongside chef Tim Scott, she co-founded Joy — a radically stripped-back ten-seat restaurant in Fortitude Valley built as a reaction against the large-format, high-overhead restaurant model that was squeezing margins across the industry.

Joy operates as a genuine two-hander: a compressed-stone counter, an open galley kitchen, and just ten guests, four nights a week, all sharing the same omakase-inspired seasonal menu. It’s designed so nothing is wasted and nothing goes unseen — as Baldwin puts it, 'there’s nothing that doesn’t go through my hands at Joy.'

The restaurant was a finalist in the Gourmet Traveller Restaurant Awards in 2020, its debut year, and has remained booked out months in advance ever since.

At CEO CookOff Brisbane, Sarah brings a hyper-local, zero excess model of hospitality — proof that a restaurant can do more with less, and that nothing on the pass needs to go to waste.
