Guillaume Brahimi

Paris-born Guillaume Brahimi began his career the traditional way — a two-year apprenticeship at the historic Aux Charpentiers, followed by a role as commis at three-Michelin star La Tour d'Argent. At 19, Brahimi joined Joël Robuchon’s kitchen at Jamin, rising over four years to sous chef under a chef widely credited with rewriting the rules of modern fine dining, before relocating to Sydney in the early 1990s.

Brahimi’s first Sydney restaurant, Pond in Kings Cross, earned Two Hats within months of opening. In 2001, he won the contract to run the Sydney Opera House’s flagship restaurant, reopening it as Guillaume at Bennelong, which reached Two Chef’s Hats by 2003 and regained Three Hats in the 2014 Good Food Guide.

In 2008, Brahimi launched Bistro Guillaume at Melbourne’s Crown Casino, followed by a second location at Crown Perth in 2012 and a Sydney site in 2016 — bringing his classic French bistro format to three states.

In 2021, he was appointed Culinary Ambassador of Crown Sydney. Brahimi has published multiple cookbooks, including Guillaume: Food for Friends (with proceeds supporting Chris O'Brien Lifehouse cancer research) and French Food Safari, co-authored with Maeve O'Meara and adapted into an SBS television series.

At CEO CookOff Sydney, Brahimi brings four decades of classical French training applied to some of Australia’s most enduring dining rooms, alongside a long-standing personal commitment to charitable causes through his own Bestest Foundation gala dinners, which have raised more than $7 million for children in need.
