Monty Koludrovic

Monty Koludrovic’s path into hospitality began with a formative meal at age 12 at The Boathouse at Blackwattle Bay, and a rather more calamitous early career highlight involving an exploding cream gun.

He went on to build a serious international CV, including stints at London’s La Trompeter and The Dorchester, before returning to Sydney to lead the kitchen at Becasse and Café Sydney. In 2014, Koludrovic joined Maurice Terzini’s Icebergs Dining Room and Bar at Bondi as head chef, rising to executive chef and eventually overseeing the entire Icebergs group, including The Dolphin, Scout, Bondi Beach Public Bar and Ciccia Bella. During his six years there he also served as a state judge for the delicious. Produce Awards.

In 2019, he relocated to Byron Bay before taking on the role of Culinary Director at Los Angeles hospitality company Botanical Group, working across venues in the US.

In early 2026, Koludrovic was announced as Head of Culinary for a new Victor Churchill flagship restaurant opening at Crown Melbourne in 2027 — a partnership with butchery group founder Anthony Puharich, a close friend of nearly twenty years.

Victor Churchill, once described by the late Anthony Bourdain as 'the most beautiful butcher shop in the world', is expanding from its acclaimed Woollahra and Armadale sites into a dedicated bar and grill built around Koludrovic’s menu.
